Having the advantage of flat or mostly flat ground, cross-country skiing doesn't really allow the possibility of loss of control. You can learn the basic motion at your own pace and get a great workout on a snowy day.
Downhill skiing is probably next in difficulty. The first time is always the hardest and you'll probably want to spring for a lesson to get up and going for maxiumum enjoyment.
Snowboarding is a bit of a wildcard. Some people, especially those with surfing or waterskiing experience take to it quite quickly. For skiers and just about everyone else, however, the double concept of having your feet both locked in place and facing sideways down the mountain is a little disconcerting at first. A lesson is definately in the cards as small shifts in balance can make big changes in direction. Also, the equipment is slightly more difficult to operate and often requires a bit more flexibility to don.
